Roasted Chickpea Salad

01Preheat oven to 400°F (200°C). Toss chickpeas with olive oil, paprika, and garlic powder. Roast for 20–25 min until crispy. 2. While chickpeas are roasting, mix together lemon juice, olive oil and salt/pepper for dressing. 3. Assemble salad: greens, quinoa, veggies, avocado, and feta. 4. Top with roasted chickpeas and dressing
