Vegetable Pot Pie Soup
Creamy vegetable pot pie-inspired soup with white beans, mushrooms, broccoli, peas, and herbs.

01Heat olive oil in a pot over medium heat. Add the onion, celery, mushrooms, and carrots and cook until softened. 2. Add garlic and thyme and cook for 1 minute. 3. Add broccoli, peas, white beans, and broth. 4. Scoop ½ cup of the beans out, mash them with a fork, and add it into the pot to thicken the soup. 5. Simmer for 10-15 minutes. 6. Stir in milk and parsley. 7. Season with salt and pepper and serve.
