- 1 whole โ medium onion, diced
- 2 cloves โ of garlic, minced
- 2 whole โ celery stalks, diced
- 8 oz โ cremini mushrooms, sliced
- 2 whole โ medium carrots, diced
- 1 cup โ frozen peas
- 1 whole โ ½ cups of broccoli florets
- 3 cans โ of white beans, drained and rinsed
- 4 cups โ of vegetable broth, low-sodium
- 1 cup โ full-fat coconut milk
- 1 tsp โ fresh thyme
- 2 Tbsp โ fresh parsley
- 1 whole โ ½ tsp sage
- 1 whole โ Salt and pepper, to taste
