    In a large saucepan combine the first five ingredients (through Italian seasoning) and ¼ cup water. Cook over medium-low about 10 minutes or until vegetables are tender, stirring occasionally and adding water, 1 to 2 tablespoons at a time, as needed to prevent sticking. Stir in lentils, tomatoes, vinegar, salt, and pepper. Taste and adjust seasoning. Cook 5 to 7 minutes or until sauce thickens. Cook pasta according to package directions; drain.
