Potato Pizza Bowls
Roasted potatoes topped with marinara, mushrooms, onion and greens for a pizza-flavored bowl.

01Preheat oven to 400F. 2. Toss cubed potatoes with optional oil, garlic, onion and salt; roast 20-25 min. 3. Saute onion until soft, add garlic, then mushrooms; cook ~5 min and add oregano. 4. Combine potatoes, greens and marinara; top with the mushroom mixture. Enjoy.
