Sweet and Sour Artichoke Salad

    Peel the outer leaves from the artichokes and cut them into quarters. Place them in a bowl of water with lemon juice. 2. Heat the oil in a large saucepan and cook the onions until golden. Add the beans and stir. 3. Drain the artichokes and add them to the pan. Pour in 1 1/4 cups of water and cover. Simmer gently for 10-15 minutes. 4. Add the peas, season with pepper, and cook for a further 5 minutes, stirring from time to time, until the vegetables are tender. 5. Strain the vegetables through a sieve and place them in a bowl. Leave to cool, then cover and chill in the refrigerator. 6. To make the salsa, mix all the ingredients in a pan. Heat gently until the sugar has dissolved. 7. Simmer for 5 minutes. Leave to cool. Drizzle over the salad. Garnish with mint leaves.
