Roasted Tomato & Hummus Toast with Balsamic

01Preheat oven to 400°F. 2. Toss the halved cherry tomatoes with salt and pepper and roast for 10 – 12 minutes until softened. 3. Toast the whole-grain bread to your preferred texture. 4. Spread hummus evenly over both slices and top with avocado slices. 5. Spoon the roasted cherry tomatoes over the toast. 6. Drizzle with olive oil and balsamic. 7. Sprinkle pumpkin seeds over the top and season with salt and pepper.
