Apricot & Pineapple Muffins
Tropical buckwheat-millet muffins with apricot, pineapple and macadamia.

01Preheat oven to 350F. 2. Blend buckwheat, millet and flax seed; transfer to a mixing bowl. 3. Blend sugar, salt, baking soda; add to bowl. 4. Blend water or coconut milk, apricots, pineapple and lime juice; add to bowl. 5. Stir together, then fold in chopped pineapple, macadamia nuts, shredded coconut and chopped cranberries. 6. Pour into a bread pan or muffin tins. 7. Bake 25 min. 8. Cool and enjoy.
