Ginger Sweet Potato Soup

01In a pan over medium heat, warm the olive oil. 2. Add the diced onion and cook until lightly caramelized, about 5-7 minutes. 3. Add in the garlic and ginger and cook for an additional minute, or until fragrant. 4. Transfer the mixture to a blender. 5. Add the cooked sweet potatoes, ground flaxseed, vegetable broth, and coconut milk. Blend until smooth and creamy. 6. Taste and season with salt and pepper to taste. 7. If needed, warm gently on the stovetop before serving.
