Apple Cranberry Muffins
Hearty gluten-free buckwheat-millet muffins studded with apple and cranberry.

01Preheat oven to 350F. 2. Blend buckwheat/millet and flax seed; transfer to a mixing bowl. 3. Blend sugar, pecans/walnuts, salt, baking soda; add to bowl. 4. Blend water, cranberries, chopped apple and lime juice; add to bowl. 5. Stir everything together, then fold in sunflower seeds, chopped cranberries and shredded apple. 6. Pour into a bread pan or muffin tins. 7. Bake 25 min at 350F. 8. Cool and enjoy.
