Veggie Lasagna
Layered veggie-noodle lasagna with cashew cream and marinara.

01Preheat oven to 400F. 2. Thinly slice zucchini, yellow squash and sweet potatoes. 3. Steam veggies until slightly soft. 4. Blend soaked cashews, water, salt, date, garlic powder and lemon into cashew cream. 5. Layer marinara, veggie noodles, spinach, onion and cashew sauce; repeat. 6. Cover and bake 45-60 min; rest 10-15 min.
