Vegan Vanilla Cupcakes
Light gluten-free vanilla cupcakes sweetened with maple syrup.

01Preheat oven to 350F and line 12 tins. 2. Combine plant milk, lemon juice and baking soda; rest 5 min. 3. Prepare chia eggs. 4. Beat in maple syrup and milk mixture, then applesauce, oil, vanilla, baking powder and salt. 5. Add the flours; mix to a thin pourable batter. 6. Fill tins and bake 24-31 min. 7. Cool fully, then frost and garnish.
