Vanilla Cream

Cashew-coconut vanilla cream for topping pancakes, French toast or fruit.

    Soak cashews a couple hours; drain. 2. Blend cashews with coconut milk, vanilla, maple syrup/dates and salt until smooth. 3. Use a touch of water to help blend. Optional: churn in an ice cream maker for gelato.
