Spring Rolls with Peanut Sauce

    Slice all the vegetables. 2. Create the peanut dipping sauce by whisking together the peanut butter, lime juice, water, garlic, and soy sauce. 3. Soften the rice paper wrappers by dipping one at a time in a shallow dish with warm water for a few seconds. 4. Assemble each roll by layering the edamame, avocado, cucumber, carrot, purple cabbage, cilantro, and peanuts in the center. 5. Fold the sides of the wrapper in and roll tightly. 6. Finish rolling and serve with the peanut sauce for dipping.
