Creamy Arugula Soup

Blended potato and arugula soup finished with coconut milk.

    Saute onion and celery in oil until tender, ~8 min. 2. Add garlic; saute 1 min. 3. Add potatoes, water/broth and salt; boil. 4. Lower heat, cover and simmer until potatoes are tender, ~20 min. 5. Add arugula and stir until bright green, ~3 min. 6. Blend until smooth (vent the lid). 7. Return to pot, stir in coconut milk; season and serve warm.
