01Cook the asparagus in boiling water for 3-4 minutes, until tender. Drain and rinse under cold water. 2. Grate the rind from half of 1 orange and set aside. Peel both oranges and cut them into segments. Squeeze the juice from any leftover membranes into a bowl and set aside. 3. Place the asparagus, orange segments, tomatoes, and lettuce into a bowl. 4. Separately, mix the oil, vinegar, 1 Tbsp orange juice, and 1 tsp of the grated rind together. Add salt and pepper to taste. 5. Just before serving, pour the dressing over the salad and toss to coat.
