    Select the Sauté function on the Instant Pot. Once hot, add the olive oil and Abbot’s Butcher Ground “Beef.” Cook for 6–8 minutes, breaking it up as it browns. 2. Add the diced onion and minced garlic. Cook for about 1 minute, or until the onion begins to soften and the garlic is fragrant. 3. Pour in 1 cup of water to deglaze the pan and use a wooden spoon to scrape up any browned bits from the bottom of the pot to prevent sticking. 4. Stir in the zucchini, bell pepper, diced tomatoes, tomato sauce, another 1 cup of water, and the vegetable broth. 5. Add the bay leaf, Italian seasoning, and black pepper. Stir to combine. 6. Break the uncooked lasagna noodles into halves or smaller pieces and add them to the pot, gently pressing them into the liquid. 7. Secure the lid and set the valve to Sealing. Cook on Manual High Pressure for 4 minutes. After cooking, allow 5 minutes of natural release, then turn the valve to Venting to release any remaining pressure. 8. Add the ricotta and mozzarella. Stir until melted and well combined. 9. Ladle the soup into bowls and top with fresh basil or parsley as garnish.
