Chickpea Caesar Wrap
A quick, fiber-rich vegan wrap with mashed chickpeas, crisp romaine, cucumber, red onion, and creamy Caesar dressing wrapped in a whole-grain tortilla.

01Lightly mash the chickpeas in a bowl, leaving some whole to add texture. 2. Mix in the Caesar dressing, nutritional yeast, olive oil, salt, and pepper. 3. Add chopped romaine, cucumber, and red onion to the center of the tortilla and spoon the chickpea mixture on top. Add a squeeze of lemon juice. 4. Roll tightly into a wrap and slice in half.
