Cauliflower Tofu Stir Fry with Ginger & Sesame
A quick plant-based stir-fry with golden tofu, cauliflower rice, mushrooms, spinach, fresh ginger, and sesame for a light, savory meal.

01Heat the cooking oil in a large skillet or wok over medium heat. Add the tofu cubes and sauté until golden on all sides, about 5-7 minutes. Add the mushrooms and ginger and cook for 3-4 minutes until the mushrooms soften and the ginger is fragrant. Stir in the cauliflower rice and coconut aminos, then cook for 3-5 minutes until heated through and slightly crisp. Add the baby spinach and stir until wilted, about 1 minute. Remove from heat and drizzle with sesame oil. Top with sesame seeds and optional chili flakes or black pepper. Serve warm.
