01In a medium saucepan combine the first five ingredients (through paprika) and 1½ cups water. Bring to boiling; reduce heat. Cover and simmer 30 minutes. Blend soup until smooth using an immersion blender or traditional blender (let soup cool slightly before transferring to blender). Season with black pepper. Top servings with pepitas. Prep-time: 35 MINUTES / Ready In: 1 HOUR, 50 MINUTES Makes 9 cups
