    In a large bowl combine the first seven ingredients (through scallion). For dressing, in a small bowl combine tahini, sriracha (if using), apple cider vinegar, salt, and black pepper. Whisk until smooth, adding water, 1 tablespoon at a time, to reach desired consistency. Pour dressing over salad; toss to coat. Serve immediately, or cover and store in the refrigerator for up to 3 days. Prep-time: 15 MINUTES / Ready In: 15 MINUTES Makes 6 cups Serving size: 2 cups
