Chocolate Beet Cake
Rich, moist chocolate cake made with steamed beets and cacao.

01Preheat oven to 350F; grind buckwheat and millet into flour. 2. Peel and steam beets; puree with chia eggs, oil, sugar and vanilla. 3. Add cacao, baking soda, salt and flours; blend, adding a little water if needed. 4. Pour into a greased 9x13 pan. 5. Bake 30 min (or 25 min for cupcakes). 6. Frost with cashew cream.
