Quinoa Stuffed Peppers

Bell peppers stuffed with quinoa, mushrooms, zucchini and marinara.

    Preheat oven to 350F; cook quinoa 15 min. 2. Bake halved peppers cut-side down 10 min. 3. Saute onion 5 min, add garlic, mushrooms and zucchini; cook 6-8 min. 4. Stir in quinoa, optional beans and marinara. 5. Fill peppers, top with marinara; bake 30 min until tender.
