    Preheat oven to 425F. 2. Toss sweet potato in oil, salt and pepper; bake 15 min, stir, then 10-15 min more. 3. Cool. 4. Cook rice; cool completely. 5. Combine sweet potato, rice and remaining salad ingredients. 6. Shake vinaigrette and toss thoroughly.
