Quinoa Stuffed Sweet Potatoes
Baked sweet potatoes stuffed with quinoa, kale and hazelnuts, with tahini dressing.

01Preheat oven to 400F; bake pierced sweet potatoes 35-45 min. 2. Saute shallot and garlic, add cooked quinoa, hazelnuts and kale; drizzle with lemon and season. 3. Split the potatoes and spoon in the quinoa mixture. 4. Whisk tahini dressing and drizzle on top. Serve.
