Anti-Inflammatory Kale Salad

Massage kale with 1 tsp olive oil until tender.
Ingredients (for 2 servings)
1 whole โ • 3 cups chopped kale (massaged with 1 tsp olive oil)
1 whole โ • ½ cup shredded red cabbage
1 whole โ • ½ cup grated carrots
1 whole โ • ¼ cup pomegranate seeds
1 whole โ • ¼ avocado, diced
1 whole โ • 2 tbsp hemp seeds
1 whole โ • 2 tbsp walnuts (chopped)
1 whole โ • Juice of ½ lemon
1 whole โ • 1 tbsp extra virgin olive oil
1 whole โ • 1 tsp turmeric + pinch of black pepper

1 whole โ Massage kale with olive oil until tender.
1 whole โ Toss all ingredients in a large bowl.
1 whole โ Whisk lemon juice, turmeric, pepper, and olive oil for dressing.
1 whole โ Drizzle and toss before serving.
