Quinoa Veggie Salad
Toasted quinoa with roasted sweet potato, cabbage, cucumber and tomato.

01Preheat oven to 400F. 2. Toast rinsed quinoa, add 4 cups water; cook 15 min. 3. Roast cubed sweet potatoes 20-25 min. 4. Shred cabbage; cube cucumbers. 5. Assemble quinoa, sweet potato, cabbage, cucumber, tomatoes and parsley; drizzle with dressing. Enjoy.
