White Bean Soup & Grilled “Cheez”

01Heat a saucepan over medium heat and add a splash of water or a little oil if desired. 2. Add the onion and garlic and cook for 3-4 minutes until softened. 3. Stir in the white beans and vegetable broth, then simmer for 10 minutes. 4. Blend part or all of the soup until creamy, then season with black pepper and a pinch of salt if needed. 5. Spread the dairy-free cheese evenly between the bread slices to make 2 sandwiches. 6. Heat a skillet over medium heat and grill the sandwiches for 2-3 minutes per side until golden and the filling is melted. 7. Serve one grilled “cheez” sandwich with one bowl of soup per serving.
