White Bean Chili

01Heat olive oil in a large pot over medium heat. Add onion, bell pepper, and celery and cook until softened, about 5-7 minutes. Stir in garlic, cumin, oregano, chili powder, and paprika and cook for 1 minute. Add green chiles, white beans, vegetable broth, and corn. Bring to a simmer and cook uncovered for 25-30 minutes, stirring occasionally. Lightly mash some of the beans to thicken the chili. Stir in Greek yogurt and lime juice, then season with salt and black pepper to taste. Simmer 2-3 minutes more and serve warm.
