Cauliflower Rice
Riced cauliflower, oven-roasted or lightly sauteed as a grain-free side.
Method

01Remove leaves and chop cauliflower into chunks. 2. Pulse in a food processor to a rice-like texture (do not over-process). 3. Saute in a skillet with optional oil and seasonings until lightly browned and soft, OR spread on a parchment-lined sheet and bake at 400F for 20 min. Enjoy.
