In a large pot or Dutch oven combine the first seven ingredients (through Japanese Togarashi spice blend) and 6 cups water.
Ingredients (for 6 servings)
4 cup โ wild mushrooms
4 whole โ scallions
2 tbsp โ brown rice vinegar
1.5 tsp โ ginger
2 clove โ garlic
2 tsp โ kelp granules
2 pinch โ Japanese togarashi spice blend
5 oz โ dry soba or udon noodles
1 whole โ carrot
1 whole โ bell pepper
1 cup โ snow peas
7 oz โ firm tofu
1 tbsp โ miso paste
0.25 cup โ cilantro leaves
0.5 whole โ a toasted nori sheet
