To make cashew sauce, in a small saucepan combine the ¼ cup raw cashews and 1 cup water.
Ingredients (for 4 servings)

3 tbsp โ brown rice vinegar
1 tbsp โ + 1 teaspoon reduced-sodium soy sauce
1 tsp โ Chile-Garlic Sauce or sriracha sauce
1 tsp โ cane sugar
0.5 tsp โ ginger

2 whole โ yellow summer squash and/or zucchini
8 whole โ pineapple
2 whole โ portobello mushroom caps
1 whole โ bell pepper
4 cup โ brown rice
