Soak the cashews in water for 2 hours or pour boiling water over them, cover, let them soak for about 20 minutes, then drain them.
Ingredients (for 3 servings)
0.5 cup โ cashews
0.5 cup โ red
2 clove โ garlic
1 tsp โ ginger
2 tbsp โ tomato paste
1 tsp โ turmeric
1 tsp โ cumin
1 tsp โ coriander
0.75 tsp โ garam masala
0.5 tsp โ salt
0.5 tsp โ black pepper
0.25 tsp โ red pepper flakes or Kashmiri chili powder
0.25 tsp โ cardamom
1 can โ fire-roasted or plain diced tomatoes
0.33 cup โ loosely packed cup fresh cilantro leaves and stems
5 cup โ vegetables
5 cup โ brown basmati or long-grain rice
